Composition, structure, and properties of food color, flavoring agent, and food additives. Operation and maintenance of instruments used in chemical analysis of food. Qualitative and quantitative analysis of food component using spectroscopy, fluorometry, atomic absorption spectroscopy, gas chromatography and high performance liquid chromatography techniques.
